No regrets reading very informative write ups from Herbfest. Been growing herbs since 2003, and i find it very intresting and educational both in cooking and its medicinal use. please keep me posted whatever is new as in our country we have just started using fresh herbs in our cooking as we are depending on bottled herbs.

Oui, je parlais de Calimerotte, mais par contre, quand je parlais du staff, je ne parlais pas de celui du fdf, mais de celui d’HOL (et en passant, HOL n’existe plus, ceux qui gйraient l’asso et le serveur ont disparu dans la brume et les domaines ont expirй, ce qui fait que nous les 8 qui йtions encore actifs dans le staff (moi, Blackhawk, mamboule, Tristou, Elfix, FandeCRF, vincetreize et trioxx/overtux), sommes tous sur le pavй depuis dйbut fйvrier). Cali n’йtait pas dans le staff du FDF pendant que j’йtais encore lа-bas, mais a joint le staff FDF bien aprиs la grosse vague de dйparts, et son entrйe coпncidait йtrangement avec le fait qu’elle avait cessй de se connecter sur hol.

Hey Mr. Bob,
I wanted to let you know that I was there for Herb Fest and brought my mom (I am 54 and my mom is 85). We loved the experience but we are both really shy so we did not come to speak with you(I have forwarded your website to her and she now recieves your e-mails ). Just wanted to let you know we bought lots of plants and we love them. I watched this video, but would love to see more dressings that do not have vinegar/citrus. I love my wine with dinner and need to get recipes that compliment wine for me. Neither vinegar nor citrus have a chance!
Can’t wait to hear back. I truly love your e-mails.

Thanks Phoenix for the nice email and never worry about being shy as I keep talking so much you and your Mom would not be able to get a word in edgewise!!!

First off is thanks for shopping with us at HerbFest and second is congrats to being so nice to your Mom. She’s a very lucky lady to have someone who spends time with her. Congrats to you for your compassion and to her for apparently raising a nice person.

I’m not exactly sure but we may have put up another video from Chef Bones, Wakefield CC, that he did with the kids on making herbal salad dressings. This was a class done this year for the kids ( parents too) to acquaint folks with the simplicity of using herbs for salad dressings. Bones does a nice job of explaining the chemistry of salad dressings and maybe he has some mention of salad dressings that do not use vinegar or citrus. If my memory is correct one nice ingredient used in lieu of, or to counteract the acididty, is buttermilk. I’ve also CC’d Cindy on this as she is very talented and has so many different recipes that she might be able to share with you.

I’m going to CC our videographer ( he puts up videos ) to see if he knows if video on site but you can always go to site and look at video tab and see what is there. Right now we are in midst of doing some changes to the herbfest site so not as navigable as eventually will be, but take a looknsee.

I visited and enjoyed HerbFest. I bought several organic plants at HerbFest this year and they are GIANTS, I mean G I A N T S (it’s amazing to me!) compared to the ones I got at Home Depot with all the chemicals etc (both were planted at the same time, side by side)…. To be honest, I never expected this. I thought the organic ones would struggle, this is not the case. I have pictures to prove it! I am delighted with them and especially delighted that we have such an awesome family (you know who you are) who takes great pride in our magnificent and beautiful down town Wake Forest. I also have recently taken the advice from this website of the Tea Tree Oil for my daughter’s acne. I am so thankful to be a part of a great community and to have experienced HerbFest for the first time and will be there on opening day every year to get the first and best pick of all the plants! Much more than just plants at HerbFest folks, but I love the plants for my garden, especially the edible ones. I love this little Down Town -it’s like taking a trip back in time where everyone knew each other, little shops and parlors… with this fast paced wireless world we live in, take a walk down South White Street and escape the fast paced world we all live in. Quaint still exists in Wake Forest ,thanks to people who care about quality of life like Bob.

I noticed the post about salad dressings…thought I would throw in my 2 cents worth.

Have you tried a wilted lettuce salad?

using a few slices of bacon, fry them till they are crisp, then crumble and sprinkle them over a bowl of tender salad greens and herbs (keep it simple) on which a small amount of lemon or lime juice has been squeezed. Drizzle the HOT bacon fat (a couple of tablespoons or less for a two-person salad) over the greens while tossing the salad, and eat it immediately. It does not keep well, and it’s not good once the bacon fat congeals, but if you try it once, you will love it! Best with a few croutons and very thin radish slices, but not much else. Very good with medium-dry wine, prior to the main course!

You are not crossing any lines by submitting a recipe and I hope you will do many more as well as other herbal tips. You are doing exactly what this blog is here for, to share communications, to educate and to have fun. Please keep it up.

Hey I might take one of your posts and use it on our herbal lore/legend series if you don’t mind. Also love your use of wines. I’ll actually go and email my friend Joe who has wine store here locally ( know you are in Canada ) and see if we can get him to contribute occassionally to the wine of choice for some of the recipes also.

Hi. I heard about HerbFest years ago frorm my massage therapist. Now I am trying to tell a young woman at work who also does medicinals. But I do not see any info on the site about where you are located. I thought it was Ohio but unsure. Wake Forest means nothing to me. I think this should be prominentally displayed on the main page or at least under a tab.

I did see a tab with info about an acronym I do not recognize. Maybe that is it. Bear in mind please that not everyone has the inside info on the Fest or who sponsors it. Thanks. Mary

I have always desired to go more natural, eat more organic and use more herbs to enhance food no longer seasoned with salt.
I am currently suffering from irratable bowel syndrome and had initially started to chew on fennel seed which is supposed to aid digestion and ease the ” bloats” :)
Any suggestions…

One of these days Im going to float off into the sunset!

I would try:

Sandy Mush Herb Farm In Leicester, N.C. first and if they don’t have then try Richter’s in Canada.
